Easy Peasy Garden Pea & Herb Soup

As the title says, it’s a very easy and quick soup to make, perfect for mid week when you get home from the office later than expected and don’t have the energy to cook up some elaborate culinary delight. It’s fresh, light and delicious even if it isn’t elaborate, perfect with a fresh crispy baguette you’ve picked up on the way home and if you don’t have a fresh loaf handy you could always make croutons with a few old slices!

This soup takes about 15 minutes to make and that includes picking the herbs from the garden!

Ingredients – serves 2 large, 4 small
500g frozen garden peas
Large handful of fresh parsley, coriander & mint
2 cups water
Salt & pepper
Feta cheese to serve

Place the frozen garden peas, water and herbs in a pan over a low heat.
Bring just to a simmer.
Turn the heat off and blend the soup to a purée with a whizz stick, food processor or blender.
Season with salt and pepper.
Serve in bowls with feta cheese crumbled on top.

Lucky you going into spring! I was quite jealous when back in the UK and found you could buy fresh podded garden peas, we only get frozen here or you have to pod your own.

I love split pea soup. This is a new take on an old favorite, I use fresh green peas and that makes this dish explode. Thank you “Pease Pudding”.

  4. What a stunning soup, and you are right that will be very easy and I know this is weird but I LOVE frozen peas. I panic if there is none in the freezer! Don’t tell tho! c

  5. Gorgeous – I adore peas and (having worked with the biggest supplier of frozen peas in the UK once!) I know that frozen peas are fresher than those you can buy…so they´re very tasty 🙂

Now that’s a little secret we didn’t know, funny when you find out what people used to do or where they used to work. Where you chief pea tester ;0)

  10. Being a pea purist I’ve always thought pea soup was only truly possible during pea season but you make this sound so delicious I’m going to give this a go now the soup season is most certainly upon us.

  11. Oh so simple! Must remember this one when I am stuck for dinner as always have peas & feta to hand, also like the idea of brightening up winter with a very spring like soup. It is just such a wonderful colour 🙂
